Sweet and Savory Honey Bacon Potatoes

Ingredients:

2 lbs baby potatoes, halved
6 slices bacon, diced
3 tablespoons honey
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and black pepper to taste
1 tablespoon fresh parsley, chopped (for garnish)
Directions:

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
In a large bowl, toss the halved potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
Spread the potatoes out on the prepared baking sheet in a single layer. Roast in the oven for 20 minutes.
While the potatoes are roasting, cook the diced bacon in a skillet over medium heat until crispy. Remove the bacon and set aside, reserving about 1 tablespoon of the bacon grease.
In a small bowl, mix the honey with the reserved bacon grease.
After 20 minutes, remove the potatoes from the oven. Drizzle the honey-bacon mixture over the potatoes and sprinkle the cooked bacon pieces on top. Toss to combine, ensuring the potatoes are evenly coated.
Return the baking sheet to the oven and roast for an additional 10–15 minutes, or until the potatoes are golden and tender.
Garnish with fresh parsley and serve warm.
