Skillet Apple Pie Recipe

 

Ingredients:

 

For the crust:

 

1 cup unbleached all-purpose flour

 

1 tablespoon sugar

 

1/4 teaspoon salt

 

6 tablespoons cold unsalted butter, diced

 

2-3 tablespoons cold water

 

 

For the filling:

 

4-5 medium apples, peeled, cored, and sliced

 

1/2 cup granulated sugar

 

1/4 cup brown sugar

 

1 teaspoon ground cinnamon

 

1/4 teaspoon ground nutmeg

 

2 tablespoons unsalted butter

 

1 tablespoon lemon juice

 

1 tablespoon cornstarch

 

1 teaspoon vanilla extract

 

 

For the topping:

 

1 tablespoon sugar

 

1/4 teaspoon ground cinnamon

 

1 egg, beaten (for egg wash)

 

 

Instructions:

 

1. Prepare the Crust:

 

In a large bowl, whisk together the flour, sugar, and salt.

 

Add the cold butter and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.

 

Gradually add cold water, one tablespoon at a time, and mix until the dough comes together. Do not overmix.

 

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

 

 

 

2. Prepare the Filling:

 

In a large skillet, melt the butter over medium heat.

 

Add the sliced apples, granulated sugar, brown sugar, cinnamon, and nutmeg. Stir to combine.

 

Cook for 5-7 minutes, stirring occasionally, until the apples begin to soften.

 

In a small bowl, mix the lemon juice and cornstarch to form a slurry. Add this to the skillet along with the vanilla extract and stir well.

 

Continue cooking for another 2-3 minutes until the sauce thickens. Remove from heat and let it cool slightly.

 

 

 

3. Assemble the Pie:

 

Preheat your oven to 375°F (190°C).

 

Roll out the chilled dough on a lightly floured surface into a rough circle, about 12 inches in diameter.

 

Carefully lay the dough over the apple filling in the skillet, folding any excess dough over the edges.

 

Brush the crust with the beaten egg wash.

 

In a small bowl, mix the sugar and cinnamon for the topping, and sprinkle it over the crust.

 

 

 

4. Bake the Pie:

 

Place the skillet in the preheated oven and bake for 35-40 minutes or until the crust is golden brown and the filling is bubbling.
