Pecan Pie Balls (No-Bake)
Ingredients:
1 cup pecans, finely chopped
1 cup graham cracker crumbs
1 cup powdered sugar
1/2 cup light corn syrup
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
Pinch of salt
1 cup chocolate chips (for coating)
1 teaspoon coconut oil (optional, for smooth chocolate coating)
Instructions
Step 1: Prepare the Pecan Mixture
1. In a large mixing bowl, combine the finely chopped pecans, graham cracker crumbs, powdered sugar, and a pinch of salt. Stir until evenly distributed.
2. Add the light corn syrup, melted butter, and vanilla extract to the dry ingredients. Mix well using a wooden spoon or your hands until the mixture comes together and forms a sticky dough.
Step 2: Shape the Balls
1. Scoop about 1 tablespoon of the mixture and roll it between your palms to form a ball. Repeat with the remaining mixture.
2. Place the balls on a baking sheet lined with parchment paper or a silicone mat.
3. Once all the balls are formed, refrigerate them for at least 30 minutes to firm up.
Step 3: Melt the Chocolate
1. In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 20-second intervals, stirring well after each interval, until the chocolate is fully melted and smooth.
2. Alternatively, you can melt the chocolate using a double boiler on the stovetop.
Step 4: Coat the Balls
1. Remove the chilled pecan balls from the refrigerator.
2. Using a fork or toothpick, dip each ball into the melted chocolate, ensuring it is fully coated. Allow any excess chocolate to drip off before placing it back on the lined baking sheet.
3. Repeat the process with all the balls. If desired, drizzle extra chocolate over the coated balls for decoration or sprinkle with chopped pecans.
Step 5: Chill and Serve
1. Place the coated balls in the refrigerator for at least 20 minutes, or until the chocolate has hardened.
2. Transfer the pecan pie balls to a serving plate or store them in an airtight container in the refrigerator for up to 1 week.
