Ingredients

 

For the Cookies:

 

1 cup unsalted butter, softened

For the Topping:

 

3 cups shredded sweetened coconut

 

12 ounces soft caramels (about 35 caramels)

 

3 tablespoons milk

 

8 ounces dark chocolate, melted

 

 

Instructions

 

Step 1: Make the Cookie Base

 

1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

 

 

2. Prepare the Dough: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the milk and vanilla extract, mixing until combined. Gradually add the flour and salt, stirring until the dough forms.

 

 

3. Shape the Cookies: Roll out the dough on a lightly floured surface to about 1/4-inch thickness. Use a round cookie cutter to cut out circles, and then use a smaller cutter to create a hole in the center of each cookie, forming a ring.
