Ingredients:
6 sausages (Italian, bratwurst, or your choice)
2 bell peppers (red and yellow), sliced
1 medium onion, sliced
2 tbsp olive oil
1/2 tsp smoked paprika
Salt and black pepper to taste
2 lbs potatoes, peeled and cubed
1/4 cup unsalted butter
1/2 cup milk (or cream)
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
Preheat your grill or grill pan to medium heat. Cook the sausages, turning occasionally, until browned and cooked through, about 12-15 minutes. Remove from the grill and keep warm.
Heat olive oil in a large skillet over medium heat. Add the sliced bell peppers and onion. Sprinkle with smoked paprika, salt, and black pepper. Sauté for 8-10 minutes until tender and slightly caramelized. Remove from heat and set aside.
While the sausages and peppers are cooking, boil the potatoes in a large pot of salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.
Mash the potatoes with butter and milk until smooth and creamy. Season with salt and pepper to taste.
Plate the mashed potatoes, top with the grilled sausages, and spoon the sautéed peppers and onions over the top. Garnish with fresh parsley and serve warm.
