French Coconut Pie Recipe
Ingredients:
1 unbaked 9-inch pie crust (homemade or store-bought)
1 cup shredded coconut (sweetened or unsweetened)
½ cup sugar
½ cup brown sugar (optional for deeper flavor)
½ cup (1 stick) unsalted butter, melted
3 large eggs
1 tablespoon all-purpose flour
1 teaspoon vanilla extract
1 cup evaporated milk or heavy cream
Pinch of salt
Optional: Toasted coconut flakes for garnish
Instructions:
1. Prepare the Pie Crust:
If using a store-bought crust, place it in a 9-inch pie pan and crimp the edges for a decorative look.
For a homemade crust, roll out the dough, transfer it to the pie pan, and shape the edges as desired.
2. Preheat the Oven:
Set your oven to 350°F (175°C).
3. Mix the Filling:
In a large mixing bowl, whisk the melted butter, sugar, and brown sugar until smooth.
Add the eggs one at a time, whisking well after each addition.
Stir in the flour, vanilla extract, and a pinch of salt. Mix until combined.
Gradually pour in the evaporated milk or heavy cream while whisking to ensure the mixture stays smooth.
Fold in the shredded coconut gently to distribute it evenly.
4. Assemble the Pie:
Pour the coconut filling into the prepared pie crust, spreading it out evenly.
Optional: Sprinkle toasted coconut flakes on top for extra texture and flavor.
5. Bake the Pie:
Place the pie on the center rack of the oven and bake for 45–55 minutes, or until the filling is set and the top is golden brown.
Check the pie halfway through; if the edges of the crust are browning too quickly, cover them with aluminum foil or a pie crust shield.
6. Cool and Serve:
Remove the pie from the oven and let it cool completely on a wire rack.
Once cooled, refrigerate the pie for at least 1–2 hours to allow the filling to set fully.
Slice and serve chilled or at room temperature.
Tips:
For a richer flavor, use sweetened shredded coconut.
Toast coconut flakes lightly in a dry pan over medium heat before garnishing for a nutty aroma.
Serve with a dollop of whipped cream or
