Creamy Chicken and Gravy Recipe
Ingredients:
2 lbs (900g) boneless, skinless chicken breasts
1 (10.5 oz / 300g) can of cream of chicken soup
1 (10.5 oz / 300g) can of cream of mushroom soup
1 cup (240ml) chicken broth or water
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried parsley (plus extra for garnish)
1/2 teaspoon paprika
Salt and black pepper to taste
2 tablespoons olive oil or unsalted butter (for searing)
Mashed potatoes or rice (for serving)
Instructions:
Step 1: Prepare the Chicken
1. Clean the chicken breasts: Trim any excess fat or sinew from the chicken breasts. Pat them dry with paper towels.
2. Season the chicken: Generously season both sides of the chicken with garlic powder, onion powder, paprika, salt, and black pepper.
Step 2: Sear the Chicken
1. Heat 2 tablespoons of olive oil or butter in a large skillet over medium-high heat.
2. Once the oil is hot, place the chicken breasts in the skillet. Cook for 4-5 minutes on each side until golden brown. The chicken doesn’t need to be fully cooked at this stage; just get a nice sear. Remove the chicken from the skillet and set aside.
Step 3: Make the Gravy
1. Reduce the heat to medium and add the cream of chicken soup and cream of mushroom soup to the skillet.
2. Slowly stir in the chicken broth (or water) until the mixture is smooth and combined.
3. Add 1 teaspoon of dried parsley for flavor. Adjust seasoning with additional salt and black pepper if needed.
Step 4: Cook the Chicken in Gravy
1. Return the seared chicken breasts to the skillet, nestling them into the creamy gravy.
2. Reduce the heat to low, cover the skillet with a lid, and let the chicken simmer for 20-25 minutes, or until fully cooked. The internal temperature of the chicken should reach 165°F (74°C).
Step 5: Serve
1. Once the chicken is cooked, spoon the rich gravy over the chicken to keep it moist.
2. Serve the chicken and gravy over a bed of mashed potatoes or steamed rice. Garnish with a sprinkle of chopped parsley for a pop of color.
Tips:
Make it richer: Add a splash of heavy cream or a dollop of sour cream to the gravy for extra creaminess.
Vegetable pairing: Pair this dish with steamed green beans, roasted carrots, or a fresh side salad.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of water or
broth to loosen the gravy.
