Ingredients:
– 2 chicken breasts, sliced into strips
– 8 oz pasta (penne or fettuccine)
– 2 cups mushrooms, sliced
– 1/2 cup heavy cream
– 1/4 cup grated Parmesan cheese
– 1 tbsp olive oil
– 2 cloves garlic, minced
– 1/2 cup chicken broth
– Salt and pepper to taste
– Fresh parsley for garnish
Directions:
Start by cooking your pasta according to the package directions. Once it’s cooked, drain it and set it aside. In a large skillet, heat up some olive oil over medium heat. Add in those chicken strips and cook them until they turn golden brown and are fully cooked through — this should take about 7 to 8 minutes. Set the chicken aside once it’s done. In the same skillet, toss in the minced garlic and sliced mushrooms. Sauté them for about 5 minutes until they’re nice and soft. Pour in the chicken broth, bringing it to a simmer, and let it reduce by half, which will take around 3 to 4 minutes. Stir in the heavy cream and Parmesan cheese, and let it cook for an additional 2 minutes until the sauce thickens up nicely. Add your cooked pasta and chicken back into the skillet, making sure everything is well coated. Season with some salt and pepper to your liking. Serve it hot, and don’t forget to sprinkle some fresh parsley on top for that extra touch of flavor.
