Crock Pot Creamy Potato Soup Recipe
Ingredients:
6 medium potatoes (peeled and diced)
1 medium onion (diced)
4 cups chicken broth
1 cup heavy cream
1 ½ cups shredded cheddar cheese
½ cup sour cream
4 slices bacon (cooked and crumbled)
2 cloves garlic (minced)
1 teaspoon salt (adjust to taste)
½ teaspoon black pepper
½ teaspoon paprika (optional)
2 tablespoons butter
1 tablespoon cornstarch (optional, for thickening)
2 tablespoons chopped fresh parsley (for garnish)
Instructions:
Step 1: Prepare the Ingredients
1. Peel and dice the potatoes into small cubes for even cooking.
2. Finely chop the onion and mince the garlic.
3. Cook the bacon in a pan until crispy, then crumble it into small pieces. Set aside for garnish.
Step 2: Cook in the Crock Pot
1. In the crock pot, add the diced potatoes, chopped onion, minced garlic, chicken broth, salt, pepper, and paprika.
2. Stir everything together, then cover and cook on low for 6-8 hours or high for 3-4 hours, until the potatoes are soft.
Step 3: Blend for Creaminess
1. Use a potato masher to mash some of the potatoes for a thicker texture. If you want it ultra-creamy, use an immersion blender to blend part of the soup.
Step 4: Add Dairy and Cheese
1. Stir in the butter, heavy cream, shredded cheddar cheese, and sour cream. Mix well until everything is melted and creamy.
2. If the soup is too thin, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the soup to thicken it.
Step 5: Serve and Garnish
1. Ladle the soup into bowls and top with crispy bacon and fresh chopped parsley.
2. Serve warm with toasted bread or crackers for a complete meal.
Tips:
For a vegetarian version, use vegetable broth and omit the bacon.
If you prefer a chunkier soup, leave some potato pieces unblended.
