Chocolate-Dipped Cookie Dough Bars Recipe
Ingredients:
For the cookie dough layer:
1/2 cup unsalted butter, softened
1/3 cup brown sugar
1/3 cup granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
2 tablespoons milk
1 1/4 cups all-purpose flour (heat-treated to ensure safety)
1/2 cup mini chocolate chips
For the chocolate layer:
1 1/2 cups semi-sweet chocolate chips
2 tablespoons coconut oil or butter
For decoration:
Additional chocolate chips (optional)
Instructions:
Step 1: Prepare the Cookie Dough Layer
1. In a mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy using an electric mixer (about 2-3 minutes).
2. Add the vanilla extract, salt, and milk. Mix until well combined.
3. Gradually add the heat-treated flour to the mixture and mix until a dough forms.
4. Fold in the mini chocolate chips evenly with a spatula.
5. Line an 8×8-inch pan with parchment paper, ensuring it hangs over the edges for easy removal.
6. Press the cookie dough evenly into the bottom of the pan, smoothing the top with a spatula.
7. Place the pan in the refrigerator while you prepare the chocolate topping.
Step 2: Make the Chocolate Topping
1. In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil (or butter).
2. Heat in 20-30 second intervals, stirring in between, until the mixture is completely melted and smooth.
Step 3: Assemble the Bars
1. Remove the pan with the cookie dough layer from the refrigerator.
2. Pour the melted chocolate evenly over the cookie dough layer. Use a spatula to spread it smoothly.
3. Sprinkle additional chocolate chips on top for decoration if desired.
Step 4: Chill and Set
1. Place the pan back in the refrigerator for at least 2 hours or until the chocolate is fully set.
2. Once chilled, use the parchment paper edges to lift the bars out of the pan.
Step 5: Cut and Serve
1. Using a sharp knife, cut the bars into squares or rectangles as desired.
2. Serve chilled or at room temperature.
