Ground Turkey and Sweet Potato Skillet Delight

Ground Turkey and Sweet Potato Skillet Delight Recipe

Ingredients:

1 lb (450g) ground turkey

2 medium sweet potatoes (peeled and diced into small cubes)

1 tbsp olive oil

1 small onion (finely chopped)

2 garlic cloves (minced)

1 cup fresh spinach or kale (chopped)

1 tsp smoked paprika

1 tsp ground cumin

1/2 tsp chili powder (optional for heat)

Salt and pepper to taste

1/4 cup chicken or vegetable broth (optional, for deglazing)

Instructions:

1. Prepare the Sweet Potatoes

Peel the sweet potatoes and dice them into small, uniform cubes to ensure even cooking. Set aside.

2. Cook the Ground Turkey

Heat a large skillet over medium heat. Add the olive oil and let it warm up.

Add the ground turkey to the skillet. Use a spatula to break it up into smaller pieces.

Cook the turkey until browned and fully cooked through, about 6-8 minutes. Season with a pinch of salt and pepper while cooking.

Once cooked, remove the turkey from the skillet and set it aside on a plate.

3. Cook the Vegetables

In the same skillet, add a little more olive oil if needed. Toss in the chopped onion and minced garlic. Sauté for about 2-3 minutes until fragrant and the onions turn translucent.

Add the diced sweet potatoes to the skillet. Sprinkle the smoked paprika, cumin, chili powder (if using), and a pinch of salt and pepper over them. Stir to coat the potatoes evenly with the spices.

4. Sauté and Simmer

Cook the sweet potatoes for about 8-10 minutes, stirring occasionally. If the skillet starts to dry out, add a splash of chicken or vegetable broth to prevent sticking and help the potatoes soften. Cover the skillet with a lid for a couple of minutes to speed up the cooking process.

5. Combine Ingredients

Once the sweet potatoes are tender and slightly golden, return the cooked ground turkey to the skillet. Stir to combine.

Add the chopped spinach or kale to the skillet. Stir well and cook for an additional 2-3 minutes until the greens wilt.

6. Taste and Adjust

Taste the dish and adjust the seasoning with more salt, pepper, or spices as needed.

7. Serve and Enjoy

Serve the Ground Turkey and Sweet Potato Skillet Delight warm. It can be enjoyed as a standalone meal or paired with a side of rice, quinoa, or crusty bread for a heartier option.

Tips:

For extra flavor, add a splash of lemon juice or a sprinkle of freshly chopped parsley before serving.

You can substitute spinach with kale or collard greens, and turkey with ground chicken

or beef as per your preference.

Enjoy this healthy and delicious one-skillet meal!
