Irresistible Magic Lemon Cobbler
Ingredients:
1/2 cup unsalted butter, melted
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup granulated sugar
1 cup whole milk
1 teaspoon vanilla extract
Zest of 2 lemons
1/4 cup freshly squeezed lemon juice
Powdered sugar (for garnish)
Instructions:
1. Prepare the Baking Dish:
Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or similar-sized dish with butter or non-stick spray. Set aside.
2. Melt the Butter:
In a microwave-safe bowl or saucepan, melt the unsalted butter until fully liquefied. Pour the melted butter into the bottom of your prepared baking dish.
3. Mix the Dry Ingredients:
In a medium-sized mixing bowl, whisk together the flour, baking powder, salt, and granulated sugar. Ensure everything is evenly combined.
4. Combine the Wet Ingredients:
In a separate bowl, mix the milk, vanilla extract, lemon zest, and lemon juice. Slowly pour the wet ingredients into the bowl of dry ingredients, stirring gently until just combined. Be careful not to overmix; the batter should be smooth but slightly thick.
5. Layer the Batter:
Carefully pour the batter over the melted butter in the baking dish. Do not stir. The butter will naturally rise to the edges as it bakes, creating a crisp golden crust.
6. Bake the Cobbler:
Place the dish in the preheated oven and bake for 35–40 minutes, or until the top is golden brown and the edges are bubbling. Insert a toothpick into the center to check for doneness; it should come out mostly clean with a few moist crumbs.
7. Cool and Garnish:
Remove the cobbler from the oven and let it cool for about 10–15 minutes. Dust with powdered sugar for an extra touch of sweetness and presentation.
8. Serve:
Serve the cobbler warm on its own, or pair it with a scoop of vanilla ice cream or a dollop of whipped cream for a delightful dessert.
