Korean BBQ Meatballs with Spicy Mayo Dip

 

Ingredients

For the Meatballs:

1 pound (450g) ground beef

1/4 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

2 garlic cloves, minced

1 tablespoon soy sauce

1 teaspoon sesame oil

1/2 teaspoon ground black pepper

1/2 teaspoon ginger powder (or freshly grated ginger)

1/4 teaspoon red pepper flakes (optional, for spice)

Chopped green onions for garnish

For the Korean BBQ Glaze:

1/4 cup soy sauce

2 tablespoons brown sugar

1 tablespoon rice vinegar

1 tablespoon honey

1 teaspoon sesame oil

1 teaspoon cornstarch mixed with 1 tablespoon water (to thicken)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1 tablespoon sriracha or any hot chili sauce

1 teaspoon soy sauce

1/2 teaspoon sesame oil

1/2 teaspoon garlic powder

 

Instructions

Step 1: Prepare the Meatballs

1. Mix the Ingredients: In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, soy sauce, sesame oil, black pepper, ginger, and red pepper flakes (if using). Mix gently with your hands or a spatula until all the ingredients are evenly combined.

2. Shape the Meatballs: Using your hands, form the mixture into small, bite-sized meatballs (about 1 to 1.5 inches in diameter). Place the meatballs on a tray or plate.

3. Cook the Meatballs: Heat a large skillet or frying pan over medium-high heat and add a drizzle of sesame oil or vegetable oil. Cook the meatballs in batches, turning them occasionally to ensure they are browned on all sides and cooked through (about 8–10 minutes). Remove the meatballs and set them aside on a plate lined with paper towels.

 

Step 2: Make the Korean BBQ Glaze

1. Combine Ingredients: In a small saucepan, mix the soy sauce, brown sugar, rice vinegar, honey, and sesame oil.

2. Heat the Sauce: Place the saucepan over medium heat, stirring occasionally until the sugar dissolves and the sauce begins to simmer.

3. Thicken the Sauce: Add the cornstarch-water mixture to the sauce and stir constantly until the glaze thickens (about 1–2 minutes). Remove from heat.

 

Step 3: Coat the Meatballs

1. Toss the Meatballs in the Glaze: Add the cooked meatballs to the saucepan with the Korean BBQ glaze and toss until they are fully coated.

 

Step 4: Make the Spicy Mayo Dip

1. Mix the Ingredients: In a small bowl, whisk together the mayonnaise, sriracha, soy sauce, sesame oil, and garlic powder until smooth. Adjust the spice level by adding more sriracha if desired.

 

Step 5: Serve and Garnish

1. Plate the Meatballs: Transfer the glazed meatballs to a serving bowl or plate.

2. Add Garnish: Sprinkle chopped green onions over the top for a fresh pop of flavor.

3. Serve with Dip: Serve the meatballs warm with the spicy mayo dip on the side.
