Creamy Crab and Shrimp Seafood Bisque
Ingredients
For the Soup Base:
2 tablespoons unsalted butter
1 tablespoon olive oil
1 small onion, finely diced
2 cloves garlic, minced
2 cups seafood stock
1 cup whole milk
1/2 cup heavy cream
2 tablespoons tomato paste
1 teaspoon Old Bay seasoning
For the Seafood:
1 cup cooked shrimp, peeled and chopped
1 cup cooked crab meat
1 tablespoon fresh parsley, chopped (for garnish)

Instructions
1. Prepare the Base:
In a large pot, melt the butter and olive oil over medium heat. Add the diced onion and cook until soft and translucent (about 3-4 minutes). Stir in the minced garlic and cook for another minute, until fragrant.
2. Create the Soup Base:
Add the seafood stock, whole milk, and heavy cream to the pot. Stir well to combine. Add the tomato paste and Old Bay seasoning, stirring until the paste is fully dissolved. Bring the mixture to a gentle simmer.
3. Blend for Creaminess (Optional):
For a smoother texture, use an immersion blender to puree the soup base until it is silky. If you prefer a chunkier soup, skip this step.
4. Add the Seafood:
Stir in the cooked shrimp and crab meat. Let the soup simmer for 5-7 minutes, allowing the flavors to meld.
5. Season and Finish:
Taste the bisque and adjust seasoning with salt and pepper as needed.
6. Serve:
Ladle the bisque into bowls and garnish with fresh parsley. Serve hot with crusty bread or crackers.
