Stuffed Cabbage Soup Recipe

 

Ingredients:

1 large green cabbage, chopped

500g (1 lb) ground beef or ground turkey

1 medium onion, finely chopped

2 carrots, diced

2 celery stalks, chopped

2 cloves of garlic, minced

1 can (400g/14 oz) diced tomatoes

1 can (400g/14 oz) tomato sauce

6 cups beef or vegetable broth

1 teaspoon paprika

1 teaspoon dried thyme

1 bay leaf

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Sour cream or plain yogurt, for serving (optional)

Instructions:

1. Cook the Meat: In a large pot, cook the ground beef or turkey over medium heat until browned. Drain excess fat if needed and set aside.

2. Sautรฉ Vegetables: In the same pot, add onions, carrots, celery, and garlic. Sautรฉ for 5-7 minutes until softened.

3. Combine Ingredients: Add the chopped cabbage, cooked ground meat, diced tomatoes, tomato sauce, beef or vegetable broth, paprika, thyme, and bay leaf. Stir well.

4. Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 25-30 minutes, or until the cabbage and vegetables are tender

5. Season: Remove the bay leaf. Add salt and pepper to taste.

6. Serve: Ladle the soup into bowls. Garnish with fresh parsley and a dollop of sour cream or yogurt, if desired.
