This hearty and comforting soup combines tender potatoes with savory ground beef in a rich, creamy broth. Perfect for cozy evenings, it’s easy to make and packed with flavor.

Ingredients

For the Soup Base:

1 lb (450g) ground beef (lean or your preference)

4 medium potatoes, peeled and diced into 1-inch cubes

1 medium onion, finely chopped

2 cloves garlic, minced

4 cups (1 liter) chicken or beef broth

1 cup (250 ml) milk or cream (for extra creaminess, use heavy cream)

2 tbsp all-purpose flour (optional, for thickening)

1 tbsp olive oil or butter

1 tsp paprika

1/2 tsp dried thyme (or use fresh sprigs for added aroma)

1/2 tsp ground black pepper

1 tsp salt (adjust to taste)

1/2 tsp cayenne pepper (optional, for heat)

For Garnish:

Fresh parsley, finely chopped

Freshly ground black pepper

Instructions

1. Prepare the Ingredients

Peel and dice the potatoes into bite-sized cubes and set them aside in cold water to prevent browning.

Finely chop the onion and garlic. Measure out your spices and set everything within reach.

2. Cook the Ground Beef

In a large pot or Dutch oven, heat 1 tbsp of olive oil or butter over medium heat.

Add the ground beef, breaking it up with a wooden spoon. Cook until browned and fully cooked (about 5-7 minutes). Drain excess fat if needed and set the beef aside.

3. Sauté Aromatics

In the same pot, add the chopped onion. Sauté for 3-4 minutes until softened and translucent.

Stir in the minced garlic and cook for another minute, being careful not to burn it.

4. Add the Potatoes

Drain the diced potatoes and add them to the pot.

Sprinkle with paprika, thyme, salt, and black pepper. Toss everything together to coat the potatoes in the spices.

5. Simmer the Soup

Pour in the chicken or beef broth. Bring the mixture to a boil, then reduce the heat to a simmer.

Cover the pot and let it cook for 15-20 minutes, or until the potatoes are fork-tender.

6. Make It Creamy

In a small bowl, whisk together the milk (or cream) with 2 tbsp of flour to create a slurry. This helps thicken the soup.

Slowly pour the slurry into the soup, stirring constantly to avoid lumps. Let it simmer for another 5 minutes, allowing the soup to thicken.

7. Add the Cooked Beef

Return the cooked ground beef to the pot. Stir well to combine all the ingredients.

Taste the soup and adjust seasoning as needed (add more salt, pepper, or a pinch of cayenne for heat).

8. Serve

Ladle the soup into bowls and garnish with freshly chopped parsley and a sprinkle of black pepper.

Serve hot with crusty bread or crackers on the side for dipping.

Tips for the Best Soup

For a richer flavor, substitute some of the broth with beef stock or add a splash of Worcestershire sauce.

If you prefer a thicker soup, mash a few potatoes directly in the pot before adding the milk slurry.

To make it lighter, use low-fat milk or omit the cream.

Enjoy your homemade Creamy Potato and Ground Beef Soup—a perfect blend of warmth and satisfaction!
